Farm owner: Without immigrants 'this town would die'

Let's say you had a farm to run,  you can't just let the work go and it's too much for you to do yourself. You can't find Americans to do the work, because they're looking for better, more comfortable jobs that their education allows.  You are between a rock and a hard place, so what do you do when an illegal immigrant shows up, willing to do the work?  Do you turn them away and let the farm go to hell and you and your family with it? 

The gov't knows about these kinds of problems, so why don't they make work visas easier to obtain?  For example, let the farmers get them for people they wish to employ, or have already hired?  That sure beats trying to tell people that they've got to go out of business if they can't find the help they need to hire.
